The Details

Who:

I am a 20 something year old who is trying to eat healthier before things get out of hand with poor eating habits.  I know the importance of having vegetables in my diet and I am trying to help them appear more often.

What:

Try 1 new vegetable a week!  You never know what you may end up liking. :)

When: Every Monday I will post the vegetable of the week.  I will post a brief synopsis of the vegetable with a few possible recipes to choose from (you don’t have to use on of them though, they are just ideas).  You will have until Sunday night to blog about your experience with that vegetable.  Please link back to the week’s post and email me at VindicateTheVegetable@gmail.com with “Vindicate the Vegetable” in the title.  If you don’t have a blog email me a picture of your recipe, along with the recipe and your name and I will post it on here.  Roundups of the previous vegetable will be posted each Monday.

Where:

On your blog post about your experience with the vegetable each week.  If you had any preconceptions of the vegetable and if they are still true.  Also, post what you do or do not like about the vegetable.

Why:

I’m not going to say that I love all vegetables because that would be misleading.  But I do love to try new vegetables.  I may not like them, but then I can honestly say why I don’t like them.  I think many people’s perception of vegetables is somewhat skewed.  They may remember being forced to eat brussel sprouts or green beans when they were a kid and hated them.  But if they were to try them now they may enjoy them.
